Do you have a dish that holds a special place in your heart?

Laksa! As a teenager, I was originally hesitant to try it due to its reputation for being a spicy dish. However, a friend challenged me to take a bite, and I’m forever grateful for that moment. The blend of flavors, the richness of the broth, and the perfect balance of spices captivated me instantly.

At Ellenborough Market Café, we pride ourselves on showcasing the best of Peranakan cuisine alongside popular international flavours, and Laksa is undoubtedly one of our specialties. Prepared with care and authenticity, our Singapore Laksa with prawn embodies the essence of Peranakan flavors – bold, vibrant, and utterly irresistible. Reflecting on your travels, is there a specific dining experience that stands out as particularly unforgettable?

As a chef, I have a keen eye for creative nuances: from the interior design and ambiance and the presentation and flavours of their dishes, each facet adds to the restaurant’s unique story to tell. I have been fortunate to encounter numerous exceptional experiences where the hosts take their time to explain the dishes and express their pride in the food they serve. This attention to detail provides a glimpse into the dedication and effort that go behind the scenes. 

Can you recall a spontaneous food discovery during your travels that turned into an unexpectedly delightful culinary experience?

I always find dining in Seoul, South Korea to be a cozy experience, whether it is on the street or in a restaurant. At BBQ restaurants, I love that they serve you a variety of small dishes “banchan” and grill the meat right in front of you. When exploring the street food scene, try to make an effort to speak the language as it will also enhance your interaction with the vendors. Engaging with the food culture and the local people is always a delightful experience. 

If you could embark on a culinary journey to any destination in the world right now, where would you go and what local dish would be at the top of your must-try list?  

I’m curious about Peru as their cuisine reflects their diverse cultural heritage, with influences from indigenous traditions as well as European, African, and Asian cultures. I want to discover the origin story of this fusion of flavours which I would imagine would be a culinary experience that is both familiar and exotic. I am intrigued by the iconic Peruvian Ceviche. This beloved dish perfectly encapsulates Peru’s culinary prowess, with its harmonious blend of fresh seafood, zesty citrus juices, fiery chili peppers, and aromatic onions. It is a dish that marries bold flavors with delicate textures, creating a symphony of sensations that dance on the palate. Prepared using raw fish that is marinated in a mixture of citrus juices, onions, and chili peppers, the acidity of the brine not only adds flavour but also helps to “cook” the fish. In recent years, Ceviche has gained popularity worldwide, with many restaurants putting their own spin on the classic dish. 

As you continue to evolve as a chef, what fundamental values or principles do you prioritize in your culinary creations, and how do they translate into the dishes you serve? 

I place equal emphasis on both presentation and taste, instilling in our team at Paradox the importance of presenting dishes with elegance and refining cooking techniques. At the core of my culinary philosophy lies a profound respect for the intricacies of food ingredients and their origins. We hold steadfast to the belief that the fusion of various elements—flavours, presentation, and creativity—is essential in crafting exceptional dishes. Every plate that leaves our kitchen is a work of art, meticulously fashioned to tantalize the palate and captivate the senses.
